YUMMY YUM DELIGHT


The other day for dinner I wanted to make a super yummy dessert.  I was looking around at ourbestbites.com and came upon this delightful dish.  I served it up for dessert and it was an instant hit.  David said he wanted to have it for birthdays, holidays and just whenever.  He loved it so much, I made him another one a couple days later with rasberries on top instead of strawberries.  Just a small side note....the rasberries were so so much better.  It was so good!




Chocolate-Drizzled Strawberries and Cream Pie
Recipe by Our Best Bites

1 quart fresh strawberries (frozen’s not gonna cut it here. If you use them and then leave a comment telling us how gross this recipe is, we’ll cut you. Just kidding. But seriously peeps, don’t use frozen strawberries.)
1 8-oz. package cream cheese at room temperature (light is fine)
1/2 tsp. vanilla extract
1/4 c. packed light brown sugar
1 c. heavy whipping cream
1/4 c. powdered sugar
1 9″ graham cracker crust (store-bought or homemade)
1-2 ounces chocolate
In a medium bowl, beat the softened cream cheese, brown sugar, and vanilla until light and fluffy. In a separate large bowl, beat the whipping cream and powdered sugar until medium peaks form. Add about 1 c. of the whipping cream mixture to the cream cheese mixture. Beat until smooth and well-combined. Add the remaining whipping cream mixture and mix until just combined. Spread in the graham cracker crust and refrigerate for a few minutes while you prepare the strawberries.
Wash the strawberries and cut off the stems. Blot dry with a paper towel and then gently press, cut side down, into the whipped cream mixture. Set aside.
If using a chocolate bar, break it into equal pieces and place in a small Ziploc bag. Microwave for 1-1 1/2 minutes, stopping the microwave every 20 seconds to mash the bag. You want the chocolate to be melted but not hot at all. When the chocolate is melted, snip a corner off the bag and drizzle it over the strawberries. Refrigerate for at least three hours before serving. Serves 8.

HAPPY 30TH! AGAIN?

Happy Birthday to ME! I had such a great weekend! My birthday was like 3 days long. David's whole family was here from out of town so we had a little mini reunion.
We went up to Kolob and spent half the day. It was so beautiful there. There were so many wildflowers! It was amazing. The kids had a blast throwing Pootie in the lake. I took so many pictures of the beautiful outdoors.

We stopped to have a snow cone later that night. These are the best stinkin' things on the planet! I could eat these every day. Flavor of the night was peach papaya mango with a little cream mixed in.

We went to Toquerville falls on my actual birthday with all the kids. It was a blast. You can jump off one of the waterfalls into the pond below. Then you can even swim behind the waterfall. It is so very pretty there. It holds special meaning every time I come here because this is where David and I were engaged! So we really love coming here.

4th OF JULY 2011

I recently got a new camera over the 4th of July weekend so I took oodles and oodles of pictures. This is just a few of the 450 that I took. It was so hard to choose what ones to post! But these are definately the cutest and tell the best story of the fun we had.
This is the ultra cute Clark who I have not seen since Christmas. He is getting cuter every time I see him.
This was my Pootie's first 4th of July. He had so much fun boating. He did not like the fireworks very much. He cuddled close to his mommy for comfort because he was a little scared of them.
Caden and Eric had so much fun on the boat with Aunt Kara and Daddy. They were so helpful with holding the flag.

There has been a bro-mance develop between David and Brandon. The first picture is from last year. The second one is from this year. These two make such a cute couple. Don't you just love that first picture? They really hit it off.

Grandma said she needed to finish the half empty one before starting the next one but needed to have it handy for when the first one ran out. She is so cute!

We had a pretty good time. I had so much fun playing with all the kids. I hardly ever get to see my cute nephews so I had a blast. Looking forward to next year!
